Bircher Muesli. When it's good, it's really good. When it's bad - it's kind of super bad. This version is a perfect breakfast/brunch for when you feel like something healthy but hearty, and want to impress your guests with a feeling of 'oh, we eat like this every morning!' It's super easy*. Here's how to do it:
2 gala apples, unpeeled, quartered, cores removed
2 cups rolled oats
1 cup apple juice
1 cup fat-free natural yoghurt, plus extra to serve
Large pinch ground cinnamon
1/2 cup flaked almonds
1/2 cup walnuts
4 tbs pepitas (pumpkin seeds)
Blueberries and strawberries, to serve
Coarsely grate the apples. Mix the grated apple, rolled oats, apple juice, yoghurt and cinnamon in a bowl until well combined. Cover and place in the fridge for 1 hour or overnight. Combine the flaked almonds, walnuts and pepitas in a small bowl. Stir half the nut mixture through the muesli with 1 cup of yoghurt if the muesli has been soaking overnight. (If the muesli has been soaking for 1 hour, add a little extra yoghurt only as desired.) Top with yoghurt and the remaining nut mixture and strawberries/blueberries to serve.
*Super easy for my sister, all I did was serve up and photograph. It was delicious though!
