Bargains and Barley

For those of you who haven't heard, Megan Morton is hosting the garage sale to end all garage sales this weekend. The Great Stylist Garage Sale will be held on Saturday and Sunday 10am - 4pm at 85 Dunning Avenue Rosebery, NSW. Megan's recent house move has left her with two storage units filled with beautiful things she would like to get rid of (I know, sounds too good to be true)! People such as Tamara MaynesMr Jason Grant, Sophie Hart, Amanda Mahoney and Karen McCartney will be setting up trestle tables full of props, objects, artwork, frames and lighting. I'll be there with my trestle table too - it would be great to see you...in the mean time, as you see above - I'll be sorting and pricing.

On a different note, I prepared this meal tonight and felt compelled to share the recipe with you here as it was the first time I have cooked with Pearl Barley. Damn....it was good, and healthy!

Grilled Chicken with Barley Pillaf

Ingredients
1 cup (215g) pearl barley
2 cups (500ml) water
2 cups (500ml) chicken stock
250g cherry tomatoes
150g yellow teardrop tomatoes
4 single chicken breast fillets (680g)
½ teaspoon coarsely ground black pepper
½ cup coarsely chopped fresh basil
2 green onions, sliced thinly
1 tablespoon dijon mustard

Method
Preheat oven to 180°C.
Cook barley with the water and stock in medium saucepan, uncovered, over low heat, about 50 minutes or until most of the liquid is absorbed, stirring occasionally. Meanwhile, roast tomatoes in hot oven on baking-paper-lined oven tray, uncovered, about 20 minutes or until just browned and softened. Cook chicken on heated lightly oiled grill plate (I used the BBQ) until browned both sides and cooked through. Stir tomatoes, pepper, basil and onion gently into barley. Serve chicken, dolloped with mustard, with pilaf (I also added some tomato chilli chutney to go with the mustard).

Delicioso! (As Dora the Explora would say).
